John Carcasole-

John Carcasole is the co-founding partner and President for The White Chocolate Grill. John’s standout career in the restaurant industry includes owning and operating over 70 restaurants across North America.

John’s early career started with his ownership of several Burger King locations. He moved on to own and operate Moxie’s Classic Grill. Following these ventures, John co-founded Cinzzetti’s Restaurants with Bobby Fitzgerald with locations in Denver and Kansas in 1999 and later opened the first of three White Chocolate Grill locations in 2005 in Phoenix, Arizona.

Bobby Fitzgerald-

Bobby Fitzgerald is the co-founding partner and director of operations for The White Chocolate Grill. He has a 23–year background in the restaurant industry and extensive culinary education.

At age 14, Fitzgerald began cooking at the Dancing Crab in Washington, D.C. He went on to study Culinary Arts and Management at Johnson & Wales University. Following graduation, Fitzgerald worked for Houston’s Restaurants where he was an integral part of the development and expansion of the Bandera concept.

In 1999 Fitzgerald  and Carcasole launched Cinzetti’s Italian Market Restaurants with locations in Denver and Kansas City and in 2005 opened the first White Chocolate Grill location in Scottsdale, Arizona.

Fitzgerald oversees operations at both Cinzetti’s and The White Chocolate Grill and works closely with design and construction teams for the openings. Fitzgerald has worked to plant roots in each community. He is involved in a number of charities in Scottsdale, including the Boys & Girls Clubs of Scottsdale, Arizona, The American Cancer Society and numerous charitable organizations in both Kansas City and Denver.

  1. Not only do we enjoy the food, the coordination of staff amazes us and as we watch the movement patterns wonder if there are practice sessions to getting everyone on the same rapid pace. Another detail that impresses us is that no matter the direction your chair faces, there is something interesting to look at. We don’t even mind waiting to be seated!!

    I saw a video on you tube of your chef making White Chocolate Banana Cream Pie. He said the recipe was on the website (I think it was Good Morning America). Can’t find recipe on any website.   5. I was recently at the White Chocolate Grill in Phoenix. I was amazed at the
    quality of the food to say the least. I came to this webwite to search for the
    israeli couscous recipe. Unfortunately, it isnt here, can you help me out?

      Thanks so much for your message. Unfortunately we do not posted exact restaurant recipes. We do offer some great alternatives on this site. If you scroll about three-quarters of the way down on our recipes page, you will see a great recipe for Lemon Apricot Couscous with Toasted Almonds.
